Banana Cake with Chocolate Butterecream

Wow! This was a big cake!! It was a 14" round cake with banana bread and banana pudding filling with chocolate butterecream. I made the roses out of fondant as well as the pearl border on the bottom. Oh and the base board was covered in fondant also! This cake was very, very moist!!! The banana bread was delicious, not sure if the chocolate buttercream complimented it, maybe a cream cheese buttercream is better for this cake, since it's almost like a carrot or spice cake. It turned out just how I wanted though. I got to use my diamond impression mat which I had been waiting to arrive for a couple of weeks now and it came in handy. I'm still trying to figure out how to keep it from overlapping though!
Anyway, I love to make cakes like these, they are a challenge for a novice decorator like myself. One thing I should mention is that I finished it with a circle border on the top and added another name to it at the end. It really made the cake pop! From what I hear everyone loved it and there were no leftovers...LOL!

Father's Day "Pokah Face Cake"

Boy was this cake a hit! I mean it was delicious and looked great! My mom made her specialty Tres Leches (Three Milk's) cake and I made the decorations out of fondant. They all had to be cut by hand. I cut out rectangle shapes with an exacto knife as well as the club, diamond, spade and heart because I didn't have any tiny cookie cutters that would fit it. The chips were just circle cut outs and I colored everything in with edible markers. Needless to say, we played a hand of Texas Hold 'Em after eating this cake! :_)

My oldest son is a HUGE Pokemon fan so I decided to make his cake a Pokemon "forrest" if you will:) I made the cake out of tres leches, wich is three milk's and boy was it sweet! I had fun making this cake, and the look on his face was priceless. He couldn't wait to cut it so he could play with his Pokemon figures:) I know that the writing came out sloppy, but I literally decorated this in less than five minutes! I was proud of myself for that:)

A Birthday Cake for My Sister

My mom was out of town for almost 6 months and I was the designated cake maker during that time. It seemed like it would be simple enough to make, but I was very busy and ended up making this the same day as the party! I made the flowers out of fondant and sadly I didn't have time to add the finishing details to the flowers on the bottom tiers of the cake. This cake was a chocolate cake from the recipe on the Hershey's Cocoa Powder container and it also had a bavarian cream filling and fluffy boiled icing from the Wilton Meringue Powder recipe. It's probably my favorite icing because it's very glossy and very easy to decorate with, plus it's not as sweet as buttercream! Anyway, everyone liked it I myself thought it needed more chocolate in the recipe, but it was still good.

Lily Gumpaste flowers: What a challenge!

First of all, I have to mention that this cake was baked and iced by my lovely mother. She was to make a cake for my cousins Quinceanera. Since, she's not familiar with making gumpaste or fondant flowers I offered to help. So I made the lilac lilies and also a few butterflies, calla lilies and roses. They were quite a challenge since the lily's were very big and the humidity in June made it even more difficult. I scoured the internet on tips for making these lilies and finally I had to use my own technique to get them to look the way I wanted. It was actually a lot of fun and I like the way they turned out in the end. My mom was happy that I was able to stack the cake for her and add the finishing touches. The bottom tier was a delicious tres leches cake and the middle tier was chocolate with bavarian cream. The top tier was strawberry cake with strawberry filling. It was fantastic!!

Testing the Baking Grounds

I've created this blog so that I can share my journey as a cake decorator. Nowadays, it's easy to turn on your TV and find shows such as Amazing Cakes, and Ace of Cakes and feel inspired. However, my inspiration began with my Mom. When I was about oh, nine or ten years old she began taking the Wilton courses at a local bakery supply shop. I loved to watch her decorate and of course to taste her creations:) Well as an adult, I always baked cakes here and there for fun. But up until 5 years ago I began to look at it from a different perspective. What changed? Well I was getting married and wanted a beautiful cake. I saw Martha Stewart decorating a cake with fondant and my jaw dropped!! What is this beautiful cake made of??? I had to know! I started learning and watching, finally doing! I've never taken any Wilton classes as my Mom did. Instead, I've been mostly self-taught or youtube taught. I will (hopefully soon) post pictures of cakes I've made and update as often as I can any new creations. Thanks for stopping by!
